RECIPE FOR A DELICIOUS CRISPY CHICKEN

INGREDIENTS

  • 1 whole chicken

FOND & KARTOFFEL
 

  • 1 baking potato, sliced
  • 2 shallots 
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1-2 carrots
  • clarified butter
  • Salt and pepper
  • Fresh parsley

DRESSINGS

1. Dressing:

  • Mayonnaise
  • Dijon mustard
  • Salt and pepper
  • Fresh chervil and chives

2. Dressing:

  • Akacia honey
  • lemon juice or lime juice
  • Salt and pepper

 HOW TO DO IT

Prepare the Chicken
Rub the chicken with clarified butter and season with salt and pepper. Stuff the chicken with fresh parsley for extra flavor. Place the wing tips in a pot for the stock.

Prepare Vegetables and Stock
Slice baking potatoes and chop shallots, bell peppers, and carrots into smaller pieces. Arrange the vegetables in an ovenproof dish so they can absorb the chicken’s juices.

Roasting the Chicken
Preheat the oven to 200 degrees (use the air fryer function if you have it). Roast the chicken for 25-30 minutes until the skin is crispy and golden. Reduce the temperature to 170-180 degrees if the skin darkens too much. Use a meat thermometer – the chicken is done at an internal temperature of 75 degrees.

Let the Chicken Rest
Take the chicken out and let it rest for 5-10 minutes. This ensures that the juices are distributed, and the skin stays crispy.

Make the Dijon Mayo Dressing
Stir mayonnaise with Dijon mustard and season with salt, pepper, and chopped herbs.

Make the Honey-Lemon Dressing
Mix acacia honey with lemon juice and season with salt and pepper.

  • Watch the temperature: Adjust the temperature as needed to prevent the skin from becoming too dark – a crispy, not burnt skin is the goal.
  • Fresh parsley and butter inside: Stuff the chicken with fresh parsley and plenty of butter for extra flavor and juiciness.
  • Extra stock flavor: Use the cut-off wings and vegetables under the chicken to create a flavorful stock. Pour the stock liquid over the potatoes for an added taste boost.
  • Quick dressings: Make two easy dressings – a spiced mayonnaise and a sweet-tart honey-lemon dressing – in under a minute each. They can elevate the dish to new heights!
  • Juicy chicken: The chicken is done when the juices are clear and free of blood. Avoid overcooking – juiciness and tenderness are the keywords.
  • Let the meat rest: After cooking, allow the chicken to rest so the juices distribute and the flavor intensifies. Otherwise, the juices will bleed out. Meat is expensive – don’t ruin it!
